Meet the FLIK Team

Michelle Mendello, Food Service Director

With over 35 years of experience in the hotel restaurant industry, Michelle Mendello brings a wealth of knowledge to her role as Food Service Director. Her Swiss education and work with renowned 5-star establishments have shaped her expertise. Alongside raising three wonderful children and supporting the North Jersey School District, she’s cultivated a diverse skill set. Her passion for hospitality drives her to provide exceptional service and memorable experiences. 

Nathan Conkle, Executive Chef

Nathan Conkle is a seasoned culinary professional with over 25 years of experience in the hospitality industry. Holding an associate’s degree in Culinary Arts from Trident Technical College, Nathan has dedicated his career to culinary excellence and innovation. 

He began his journey working in prestigious hotels in Charleston and New Orleans, where he honed his skills and developed a deep understanding of diverse cuisines. Nathan’s expertise led him to a role at Whole Foods Market where his leadership and commitment to quality helped elevate the prepared foods section, making it a favorite among customers.

Driven by a passion for healthy and delicious food, Nathan became the chef-owner of an award-winning health food restaurant in Charleston, South Carolina. For 11 years, he delighted patrons with creative, nutritious dishes that showcased his culinary artistry and dedication to wellness.

Ana Forte, R.D., Regional Wellness Director and Dietician

Ana Forte, R.D., has been a member of the FLIK Independent School Dining team since 2014. She graduated from Florida State University with a dual degree in Food and Nutrition Science and Dietetics. Ana went on to complete her Dietetic Internship with the State of Florida, Pasco County Dietetic Internship, where she focused on community nutrition and education. 

As a Regional Wellness Director, Ana is a health and nutrition resource for many of the Chefs and District Managers in the Southeast. Her responsibilities include overseeing the implementation of programming, wellness initiatives, and nutrition education in the dining hall, working with chefs and the school community to manage special dietary needs and food allergies. Ana believes healthy kids lead to healthy adults.

Support for Allergies and Special Dietary Needs

Through this partnership, Ashley Hall works closely with FLIK’s Regional Wellness Director and dietician Ana Forte, R.D. to ensure our students with allergies and special dietary needs are not only accommodated but that they enjoy their campus meals. She is available for consultations with families as needed, and also visits campus regularly to educate our community on how to make healthy choices when it comes to meals and snacks.

Quick FLIK Facts

WHAT IS FLIK?

Flik is the last name of the couple who began the company in 1971. Building their company through corporate dining services and private catering, Rudi and Julie Flik eventually expanded into the education market, focusing on private and independent schools. In 1995, their parent company, Compass Group, acquired FLIK. FLIK operates in over 300 private and independent day and boarding schools nationwide.

HOW ARE MENUS CREATED?

The on-site chef creates menus with local/regional flavors and ingredients. They receive guidance, training and suggestions for on-trend, innovative ideas from a central FISD culinary, nutrition and marketing team.

WHAT IF MY CHILD HAS AN ALLERGY OR SPECIAL DIETARY NEED?

FISD believes in a customized approach to serving students with special dietary needs. Schools receive support from registered dietitians regarding training, operation management, and communication to ensure safety.
